Tomatillo Sauce (The BEST green sauce you’ll ever eat)

This yummy, rich sauce is made from tomatillos, which I had never heard of until my hubby fixed this for me. I lived a sheltered culinary life, what can I say. It goes great on any latin dish and can be eaten as a dip. I would caution you, however, as you can eat too much. 😂

Ingredients: 

• 6 – 7 tomatillos

• 2 Avocados (one to blend and half or a whole additional avocado to chop for chunky salsa)

• Cilantro (some you will blend and some you will chop)

• 1/4 Onion (1/8 to blend and 1/8 to chop)

• 1 Garlic clove

• 1/4 of a fresh lime

• Jalapeño (for hotter sauce, use fresh jalapeños. For milder sauce, use prepackaged pickeled jalapeños. La Costeña makes a good one.)

• Salt and pepper to taste

• Baking soda 

Instructions: 

• Remove skin from tomatillos. Set aside one. 

• Boil tomatillos, one skin, and a pinch of baking soda (to remove bitterness) in water for a few mins to soften them.

• Add tomatillos to blender or food processor. Add remaining ingredients (the half for blending) and blend to purée. Then add remaining half of chopped ingredients for chunkier salsa if desired. 

• Can eat while warm or after cooking. Delicious on tacos, quesadillas, any meat dish, or as a dip for tortilla chips. 

• Refrigerate leftovers. 

• Makes approximately 3 cups of salsa.
