White Bean Chicken Chili

White Bean Chicken Chili Recipe

Ingredients:

• 2 tablespoons butter

• 1/2 red onion peeled and chopped

• 3-4 cloves garlic minced

• ¼ cup chopped cilantro

• 1 tablespoon ground cumin

• 1 teaspoon dried oregano

• Salt and pepper to taste 

• 3 boneless, skinless chicken breasts

• 4 cans (15.8 oz) great northern beans drained

• 1 can (15.25 oz) sweet whole kernel corn

• 4 cups hot water

• 6 chicken bouillon cubes 

• 8 ounces cream cheese cut into cubes 

Garnish with: fresh cilantro, fresh lime juice, avocado.

Serve as is or with tortilla chips 

Instructions: 

• Place chicken in water and bring to a boil. Boil until chicken is done and no longer has pink juices when cut. Approximately 15-20 mins. 

• In another large stew pot, add butter to pot. Add onions, garlic, cilantro and seasonings. Sauté all this in the butter.

• Add water and chicken bouillon cubes to sautéed veggies and seasonings. Keep on medium to medium high heat. 

• Add corn and great northern beans to stew pot. 

• Add cream cheese to stew pot. Reduce heat to medium. We want the cheese to melt and thicken the soup. Stir to prevent it from sticking.  

• Once chicken is done, remove from water and shred with forks. Add chicken to remaining ingredients in stew pot. 

• Serve with a squeeze of lime juice, fresh cilantro and avocado slices. 

• This will be very creamy and delicious. Goes great with tortilla chips.
