Slow Cooker Carnitas For Tacos [Tacos De Carnitas]


Slow cooker carnita tacos

Ingredients:

2-3 lbs Pork loin or shoulder 

1/2 red onion

4 garlic cloves, minced

1 tsp oregano

1 tbsp chili powder

2 tsp cumin

1/4 cup OJ

1/4 cup lime juice

2 Bay leaves

1 1/2 cups chicken broth 

1 tbsp Salt

1 tsp black pepper  

Instructions: 

Wash pork loin and Pat dry with paper towels. Place on a plate.  

Create a rub by mixing oregano, cumin, chili powder, salt and pepper. Once mixed, apply to pork loin on both sides. 

Place loin in slow cooker. 

Add garlic cloves, sliced onion, and bay leaves to slow cooker. 

Pour OJ, lime juice and chicken broth into slow cooker. 

Cook according to your slow cooker instructions (6 – 8 hours). 

Once loin is done cooking, remove leaves and shred pork using a fork. Will be very juicy and moist. Strain to remove excess liquid if placing into tortillas for a taco. 

Can be eaten with sides and garnishes or on a taco. 

To make tacos, spoon pork onto tortilla of choice (flour or corn). 

Garnish with your favorite toppings. Examples include sour cream, cheese, cilantro, black or pinto beans, fresh salsa, tomatillo sauce, creamy cilantro sauce, fresh mango or pineapple (or both), red cabbage, sautéed onions, peppers or mushrooms, etc. 

For these Cuban style carnita tacos, we served on flour tortillas with cilantro, and fresh pineapple.
* Goes great with our homemade tomatillo sauce.
